Toasted Coconut Caramel Bark

Clasen Coconut Compound Coating (1lb - 88-556 / 25lb - 88-555)
Caramel (Merckens - 4-330 or Peter's - 4-475)
Toasted Coconut (8oz - 8-602 / 50lb - 8-639)

Melt caramel (add 1/2 to 1 tsp of evaporated milk to 1lb of caramel to thin to desired consistency) and set aside. Melt coconut coating and spread 1/2 in cookie sheet. Drizzle, spread or pour caramel on top of coconut coating (spray back of spoon with cooking oil to spread caramel). Spread other 1/2 of coconut coating on top of caramel. Sprinkle with toasted coconut. Let set and break up. Put in polypropylene bags with curling ribbon or bow on twistie.
