8 ounces Vanilla wafer cookies
7 ounces Dates, pitted, sliced in half
2 ounces Maple Syrup
7 ounces Almond paste, cut into small pieces
4 ounces White confectionery coating, melted
2 teaspoons Maple flavor
additional White confectionery coating (for dipping)
Also Assorted decorations/sprinkles
- In a food processor, grind the vanilla wafer cookies into a fine flour.
- Place the dates, maple syrup and almond paste into a microwave-safe bowl and warm gently, mixing occasionally. Place into food processor with the ground cookies. Add the 4 oz. of white confectionery coating and maple flavor. Blend until completely combined and smooth.
- Portion into desired size and roll into balls. Place them on a parchment lined tray and make an indent in the middle of the balls, about 2/3 of the way through, with a ½ inch rounded tool (end of a wood utensil works). This creates the donut shape.
- Melt the confectionery coating to the manufacturer’s recommended temperature and dip the tops into the coating; shake off excess coating before flipping over. Add decorations while coating is still wet. Place in refrigerator to harden the coating.
TIPS-have a ¼ inch diameter (or less) tool available to poke the coating if it covers the hole after dipping. If coating is too thick, add some melted paramount crystals (palm kernel oil).
